Selection of vineyards planted at altitude, with an average age of over 30 years old, aimed at maximizing freshness, varietal character, and expression of the terroir.
Harvets:
Manual, in small crates, at the end of September and beginning of October.
Elaboration:
In stainless steel tanks at a controlled temperature of 28°C for several days.
Crianza:
At least 24 months in American and French oak barrels followed by another 36 months in bottle.
